How do you change glass in a steel commercial door, what should the thickness of the wire glass be.

It will depend upon the construction of the door. Maybe with removeable beads; maybe by deconstructing the door. Unless the glass panel is only small, I would NEVER recommend wired glass in a public place. Jagged edges protrude if it gets broken. Try a laminated glass instead, if possible.
